Easy peasy Banana Oatmeal Pancakes
These 3 ingredient gluten free pancakes are the best if you are craving a healthy but sweet and yummy breakfast - because let’s be honest, sometimes a green spirulina smoothie just doesn’t do it. These pancakes are also prefect if you don’t have a lot of time in the morning because they only take about 15 minutes to prepare.
Ingredients for one person
1 egg (or two if you are really hungry)
1 ripe banana
3/4 table spoons of oats
Method
In a bowl, mash up the banana with a fork, then add the egg and mix well. Stir in the oats until your batter has the consistency of cake batter. It will be a bit lumpy but that’s fine. If you like the batter really smooth, throw the oats into the blender before adding them to the mixture.
Heat some oil or butter in a big frying pan on medium heat. Use a ladle and pour little pancakes of about 10/15 cm diameter in your pan. Depending on the size of your pan you can fit around 3 or 4 into one pan.
Bake them until light brown on each side and that’s it! Eat just like that or add any of your favorite toppings like maple syrup, fruits, seeds, honey etc.
